This Cheddar Dill Pickle Dip turned me into an outlaw. It's true. Now I pretty much dress in black and wear a mask wherever I go. I am thinking I may need to get a teardrop tattoo as well. You see, when I went to the grocery store to buy the ingredients to make this recipe, I returned to my car to discover an unpaid for block of cream cheese menacingly staring back at me from the bottom of the cart. It had worked it's way under my son's baby carrier while I was shopping.
Reveling in the $2 I cunningly just added to my net-worth, my mind started scheming... "if I do this every week with a different product, in just a couple months I can have a free taco dip!" It was almost too perfect. However, life on the lam quickly proved too much for my weak constitution. Spending night after night jumping from cheap motels under varying aliases, while under constant fear of a swat team breaking through the door, finally broke me. Putting the creamy contraband securely back in my pocket, I returned to the scene of the crime and paid for it. My days as a career criminal lasted only minutes.

How to Make Dill Pickle Dip
If you are a dill pickle lover, you will crave this dip. The bright flavor of dill permeates throughout this dip with crunchy bits of pickles and creamy shreds of cheddar mingled throughout. The base of the dip is cream cheese, but I discovered adding some sour cream gives it a lighter texture, making it easier to dip. Also, the sour cream prevents it from getting overly stiff in the fridge if you are making this recipe in advance.
Though this dip is served cold, it is best to make with softened cream cheese. You can either let the cream cheese come to room temperature or warm it slightly in the microwave. Softening the cream cheese will help it incorporate the other ingredients without becoming lumpy.
How to Keep Dip Cold
If you plan to bring this to a party where it will be sitting out for hours on end, consider buying an iced serving bowl. This will keep the dip cool for extended periods of time, ensuring you don't serve up a big ol' dish of foodborne illness. Yummy.

Cheddar Dill Pickle Dip
Ingredients
- 12 oz cream cheese (softened)
- 4 oz sour cream
- 1 ½ cups shredded cheddar cheese
- 1 cup dill pickles (diced)
- ½ cup dill pickle juice
- 2 tablespoons fresh chopped dill
Instructions
- Place softened cream cheese in a bowl with sour cream and combine until smooth.
- Add all remaining ingredients and combine.
- Serve with pretzels or crackers for dipping.
- This can be enjoyed immediately, or prepared in advance.
